Chardonnay from the Crystal Brook Vineyard in the Mount Barker subregion of the Great Southern, which we have farmed organically for the past two years. Flavours of just ripe stone fruit as well as citrus blossom.

Vinification: Parcels of Chardonnay were hard harvested and direct pressed to a combination of mature oak barriques and newer large format oak. The wine was matured on full solids and untopped before racking and bottling without fining or filtration.
