From our longest serving vineyard, the Great Southern’s only Chenin Blanc planting. The wine possesses crisp acidity and fleshy texture at once. Characters include green apples, almonds, just ripe stone fruit and wet rocks along with a salty brininess, finishing with chalky phenolics.
Subregion: Mount Barker, Great Southern
Vine Age: 27 years
Elevation: 200m
Soil: Free draining granitic sands over iron stone.
Vinification: Fruit was selectively harvested on a cold morning in the middle of March and pressed to a combination of old oak and a slightly newer oak foudre where wild fermentation occured. After 15 months the wine was racked from barrels, filtered and bottled.
